Berry Trifle

Ingredients
- 3 eggs
- 50 g sugar
- 50 g butter
- a pinch of salt
- 75 g flour
- 250 g strawberries
- 60 ml white port wine
- 1 tbsp Lemon Juice
- 1 tbsp powdered sugar
- 200 g mascarpone
- 0.5 vanilla bean (pulp)
- 1 tbsp powdered sugar
- 100 ml whipping cream
- 150 g raspberries
- powdered sugar (for dusting)

Preheat the oven to 200°C fan.

Separate the eggs. Beat the yolks with sugar until pale and fluffy. Melt the butter. Whisk the whites with a pinch of salt into stiff peaks. Sift flour over the yolk-sugar mixture, add the liquid butter and one-third of the meringue, fold in gently. Carefully fold in the remaining meringue. Spread the batter about 1 cm thick on parchment-lined tray and bake for ~10 min until golden brown. Cool completely, then cut eight circles matching the glass diameter (~6 cm).

Wash, trim, and dice strawberries. Mix with port wine, lemon juice, and powdered sugar; let macerate.

Whisk mascarpone with vanilla pulp and powdered sugar. Beat whipping cream to stiff peaks and fold in. Fold in raspberries gently.

Place one sponge slice on the glass bottom, add half the strawberries, cover with half the cream. Repeat layers of sponge, strawberries, and cream, finishing with raspberries on top. Chill for at least 20 min before serving.

Dust with powdered sugar before serving.
