Peach Granita

Ingredients

  • 4 ripe peaches
  • 2 tbsp raspberry liqueur
  • 2 tsp powdered sugar
  • 200 ml sparkling wine
  • 100 g raspberries
  • mint (for garnish)

Instructions

    Score peaches crosswise and blanch for 1 minute with boiling water. Cool in ice water, peel the peaches. Halve the peaches and remove the pits. Cut peaches into pieces, pour raspberry liqueur over them.

    Blend peaches with powdered sugar. Stir in sparkling wine.

    Pour mixture into a metal bowl and freeze for 6-8 hours, stirring frequently with a fork to form small ice crystals.

    Sift raspberries. Serve peach granita in glasses topped with raspberries and garnish with mint.
