Orange Mousse

Ingredients

  • 4 oranges
  • 2 Eggs
  • 70 g sugar
  • 500 g yogurt
  • 7 sheets white gelatin
  • 200 g whipping cream
  • 2 tbsp chopped pistachios
  • 1 sprig lemon balm

Instructions

    Separate the eggs; beat the yolks with the sugar over a hot water bath until fluffy. Stir in juice from two oranges and the yogurt.

    Soak the gelatin in cold water, squeeze out excess, then dissolve it in 2 tbsp hot water. Mix with a little yogurt to temper, then fold into the remaining cream. Chill until semi-firm.

    Peel zest from one orange, then fillet the orange; slice half of the fillets for decoration.

    Whip the cream and egg whites separately, fold them into the mousse, gently fold in the orange fillets, and chill until set. Garnish with zest, orange slices, lemon balm leaves, and sprinkle pistachios.
