Lemon Balm Mousse with Berries

Ingredients
- 1 handful lemon balm
- 100 ml dry white wine
- 4 sheets gelatin
- 250 g yogurt
- 250 g quark
- 50 g crème fraîche
- 2 tbsp vanilla sugar
- 50 g sugar
- 200 ml whipping cream
- mixed berries
- Lemon balm
Instructions

Rinse the lemon balm, shake dry and finely chop the leaves. Bring the wine to a boil, set aside and let it cool with the balm.

Soak gelatin in cold water. Mix yogurt, quark, crème fraîche, vanilla sugar and sugar well. Warm the drained gelatin with 2-3 tbsp balm‑wine, dissolve and stir into 2-3 tbsp of the cream. Fold remaining cream with the rest of the wine. Whip the cream stiff and fold into the mixture. Transfer to a bowl, cover and chill for at least 3 hours.

For serving, cut the mousse into portions and garnish with fresh berries and lemon balm as desired.
