Ingredients

  • 150 g sugar
  • 150 ml water
  • 0.5 unblanched orange (zest)
  • 0.25 l freshly squeezed orange juice
  • juice of one lime
  • 0.25 l white wine
  • 40 ml Grand Marnier
  • 1 Egg white
  • Lemon balm (for garnish)

Instructions

    Boil sugar with water and orange zest briefly, let cool, then strain into the orange juice. Add lime juice, white wine and Grand Marnier. Beat the egg white to half‑firm peaks and fold it in with a whisk.

    Place in the freezer and stir vigorously once an hour until it becomes smooth after several hours. For serving scoop into spheres, arrange on dessert bowls and garnish with kumquat slices and lemon balm leaves.
