Orange Dessert with Vanilla Cream

- 6 oranges
- 60 g sugar
- 1 tbsp Lemon Juice
- 1 tsp Cornstarch
- 20 ml whiskey
- 1 Vanilla bean
- 150 ml whipping cream
- 1 tbsp powdered sugar

Peel the oranges with a sharp knife, removing all white pith. Then cut out the fruit segments between the membranes, catching the juice.

Squeeze the remaining orange pulp well and combine all juice (except 1-2 tbsp) with sugar and lemon juice in a pot; bring to a boil. Stir cornstarch into the leftover orange juice, then add it to the pot, bring to a boil again, add whiskey, and remove from heat. Divide the compote among four glasses and let cool.

Split the vanilla bean lengthwise, scrape out the seeds, and fold them into the cream with powdered sugar until half stiff peaks form. Spoon onto the glasses, smooth, and garnish with orange zest if desired before serving.
