Ingredients

  • 1 Vanilla bean
  • 1 Organic Orange
  • 200 g spelt whole‑grain flour
  • 100 g Ground Almonds
  • 150 g butter (room temperature)
  • 65 g honey
  • 1 egg
  • 1 pinch salt
  • 100 g dark chocolate (70% cocoa)

Instructions

    Split the vanilla bean lengthwise and scrape out the seeds. Rinse the orange hot, pat dry, and finely grate the zest. Halve the orange and squeeze a little juice.

    Combine vanilla seeds, 3 tbsp orange juice, 1 tsp orange zest, flour, almonds, butter pieces, honey, egg, and salt; knead quickly into a smooth shortcrust dough. Wrap in cling film and chill for about 30 minutes.

    Knead the dough briefly again, roll it into a log about 4 cm thick, slice into 1–1.5 cm thick rounds. Shape each round into a ball, flatten slightly, and place on parchment paper on a baking sheet. Bake in a preheated oven at 180 °C (fan 160 °C; gas 2–3) for 10–12 minutes. Remove and cool.

    Melt the chocolate by chopping it roughly and heating over a hot, non‑boiling water bath. Take off the heat and let it cool to lukewarm. Dip each cookie halfway into the chocolate. Place on parchment paper and allow to dry.
