Orange Chicken with Glass Noodles

Ingredients
- 1 chicken (ca. 1.2 kg)
- 2 Garlic cloves
- 2 untreated oranges
- 400 g glass noodles
- 1 EL cornstarch
- 3 EL sesame oil
- 1 EL honey
- light soy sauce
- Cayenne pepper
- 1 spring onion (only the green part)
Instructions

Wash the chicken, pat dry, remove skin and loosen meat. Dice the chicken meat. Peel and finely chop the garlic cloves. Grate the zest of one orange, peel the zest from the other orange. Squeeze juice from both oranges, mix with zest and garlic, add to chicken cubes and cover overnight.

Cook noodles according to package instructions.

Remove chicken from marination, drain well. Mix with cornstarch and stir-fry in hot oil in a wok until golden. Add honey, then deglaze with the remaining marinade and simmer for 3-4 minutes. Season with soy sauce and cayenne pepper, add orange zest.

Wash, trim spring onion greens and cut into very thin diagonal rings.

Place drained glass noodles on a plate or large platter and arrange orange chicken on top. Sprinkle with spring onions before serving.
