- 8 carrots
- 5 Oranges
- 2 shallots
- 1 bunch Coriander
- 1 tbsp lavender honey
- 3 tbsp orange blossom water
- Salt
- 1 tbsp Olive Oil

Peel the carrots and slice them into very thin rounds. Sauté the carrots in oil for 5 minutes; they should still have a bite. Let them cool well. Peel the oranges (remove all white pith) and slice them thinly. Peel the shallots and cut them into very thin rings, catching the juice. Wash the coriander and finely chop it. Mix honey and orange blossom water. Layer carrots, orange slices, and shallot rings; season with salt and drizzle with the honey-orange blossom mixture. Let sit for 10 minutes. Sprinkle with coriander and serve immediately.
