Summer Salad

Ingredients

  • 150 g mixed greens (or sugar beet leaves)
  • 40 g nasturtium leaves
  • 4 tomatoes
  • 1 chicory stalk
  • 4 tbsp canned corn kernels
  • 4 tbsp canned kidney beans
  • 2 tbsp white balsamic vinegar
  • Salt
  • Pepper
  • a pinch of sugar
  • 1 tsp Mustard
  • 1 tbsp Lemon Juice
  • 4 tbsp basil oil (or olive oil)

Instructions

    Drain the corn and kidney beans. Wash and dry the chicory, mixed greens, and nasturtium leaves. Cut the chicory into strips, tear the greens into bite-sized pieces, and slice the tomatoes thinly.

    Combine all ingredients. Whisk together vinegar, lemon juice, salt, sugar, pepper, mustard, and oil to make a dressing, then toss the salad with it.
