  • 1 large red onion
  • 2 tbsp butter
  • 1 tbsp Rapeseed Oil
  • 1 tsp sugar
  • 2 tbsp Apple cider vinegar
  • 120 g cream cheese
  • 1 tbsp Lemon Juice
  • 1 tbsp freshly chopped herbs (e.g., parsley, chives, dill)
  • Salt
  • Pepper
  • 4 lettuce leaves (e.g., iceberg lettuce)
  • 2 Tomatoes
  • 0.5 Zucchini
  • 1 handful sprouts (e.g., alfalfa)
  • 4 bagels

Instructions

    Peel the onion, slice into rings and separate them. Heat butter and oil in a pan and sauté the onion rings over medium heat for 1–2 minutes. Sprinkle with sugar and let caramelize slightly. Deglaze with vinegar and simmer gently for 3–4 minutes until softened. Let cool.

    Mix cream cheese with lemon juice and herbs, seasoning with salt and pepper. Wash and dry lettuce leaves. Slice tomatoes after removing stems, slice zucchini into rounds, rinse sprouts and drain. Halve each bagel and spread a thin layer of cream cheese on both halves. Top with lettuce, tomato, zucchini, onion rings, and sprouts before serving.
