Onion Tart

Ingredients
- 300 g puff pastry (pre-made, frozen)
- 12 shallots
- 2 Garlic cloves
- 2 sprigs Rosemary
- flour (for dusting the work surface)
- 2 tbsp liquid blossom honey
- 1 egg yolk

Let the puff pastry thaw. Preheat the oven to 200°C (392°F) with upper and lower heat.

Peel the shallots and garlic, then roughly chop the garlic. Wash the rosemary, shake dry, pluck the needles, and finely chop. Roll out the puff pastry on a floured surface and cut it to fit the pan size. Warm the honey in the pan, add the shallots and rosemary, and caramelize for 2-3 minutes. Remove from heat, cover the onions with the pastry lid, press the edge firmly against the pan, brush with egg yolk, and bake in the preheated oven for 30–35 minutes until golden yellow. Take out, carefully flip, and serve immediately.
