Small Onion-Pear Tart

- 6 sheets puff pastry (frozen, about 10x10 cm)
- 3 red onions
- 3 tbsp softened butter
- 2 tsp cane sugar
- Salt
- ground pepper
- 150 g Gorgonzola cheese
- 3 pears
- 1 egg yolk

Let the puff pastry thaw while lying side by side. Peel and slice the onions into rings. Sauté in 2 tbsp hot butter, sprinkle with sugar, and cook for about 2 minutes until golden brown; season with salt and pepper and set aside.

Crumble the cheese. Peel the pears, halve them, remove the cores, and cut the halves into fan-shaped slits. Whisk the egg yolk with 1 tbsp water. Brush the edges of the pastry sheets with this mixture, then arrange onions, cheese, and pear halves on the pastry, leaving a border about 0.5 cm wide. Brush the pears with the remaining butter. Bake in a preheated oven at 200°C (medium) for about 15-20 minutes until golden.
