Ingredients

  • 700 g onions
  • 2 tbsp plant oil
  • 1 tsp sugar
  • Salt
  • black pepper (freshly ground)
  • 800 ml meat broth
  • 200 ml dry white wine
  • 2 Garlic cloves
  • Lemon juice
  • 4 slices baguette
  • 80 g freshly grated Gruyère cheese
  • fresh chopped thyme (for sprinkling)

Instructions

    Peel the onions and slice them into thin rings. Heat the oil in a pot and gently sauté the onions for about 10 minutes until soft. Season with sugar, salt, and pepper, then simmer for another ~5 minutes, stirring occasionally, until golden brown.

    Add the broth and wine, bring to a boil, then reduce heat and let it simmer for an additional 15 minutes.

    Preheat the oven to 220°C (425°F) on top heating mode.

    Peel the garlic cloves and press them into the soup. Season with lemon juice, salt, and pepper to taste.

    Transfer the onion soup into four oven‑proof bowls. Place one slice of baguette on each bowl and sprinkle the Gruyère cheese over it. Bake in the preheated oven for 5–10 minutes until the cheese melts, then immediately serve sprinkled with thyme.
