Ingredients

  • 1 kg onion
  • 50 g butter
  • 250 ml dry white wine
  • nutmeg
  • 1 tsp freshly chopped thyme
  • a pinch ground cumin
  • 4 slices baguette
  • Salt
  • Pepper (freshly ground)
  • 2 Garlic cloves
  • 4 slices raclette cheese

Instructions

    Peel the onions and cut them into thin strips. In a pot, heat the butter and sauté the onions until translucent. Add the broth and wine, then stir in nutmeg, thyme, and cumin; let the soup simmer for 25-30 minutes. Preheat the oven grill.

    Toast the bread slices and rub each with a peeled garlic clove. Squeeze the garlic into the soup and stir it in. Season the soup with salt and pepper, then pour it into heat‑proof bowls. Place the bread slices on top of the soup, cover them with cheese, and place the bowls under the oven grill for a few minutes until the cheese melts. Serve immediately.
