Onion Soup

Ingredients
- 600 g red onions
- 2 tbsp oil
- Salt
- Pepper (freshly ground)
- 700 ml meat broth
- 200 ml dry red wine
- 1 clove garlic (chopped)
- 1 tsp lemon juice
- 0.5 packet garden cress
- spring onion
- 2 slices day‑old white bread
- 2 tbsp butter
Instructions

Drain the white bread slices and cut them into thin strips. Toast in not too hot butter until golden brown, then drain on kitchen paper.

Peel the onions and slice them into thin rings. Heat the oil in a pot and sauté the onions for about 10 minutes until soft. Add the broth and wine, bring to a boil, then simmer for another 15 minutes. Add the garlic, puree the soup, season with lemon juice, salt, and pepper.

Cut the garden cress from the packet with scissors. Serve the soup in bowls, sprinkle with cress, place the toasted bread on top, and garnish with spring onion.
