Ingredients

  • 3 onions
  • 1 small stalk of leek
  • 2 tbsp Rapeseed oil
  • 1 bay leaf
  • 400 ml Vegetable broth
  • 100 ml dry white wine
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp ground coriander
  • 4 pumpernickel rolls (10 g each)
  • 1 tbsp grated Gruyère cheese

Instructions

    Peel the onions, halve them and cut into half-rings. Clean and wash the leek, then slice into rings. Heat oil in a pot and sauté the onions and leeks until translucent. Add the bay leaf. Pour in the broth and wine. Season with salt, pepper, and coriander, and simmer for about 10 minutes.

    Preheat the oven grill. Line a baking sheet with parchment paper. Place the pumpernickel rolls on it and sprinkle with cheese. Broil under the grill until golden brown. Divide the soup into two bowls and serve with the cheese-topped rolls.
