Onion Puff Pastry

Ingredients
- 0.5 cube fresh yeast (21 g)
- 300 g flour
- Salt
- 2 tbsp olive oil
- 8 shallots
- 2 tbsp plant oil
- 0.5 tsp freshly chopped thyme
- 0.5 tsp freshly chopped rosemary
- pepper (ground)
- flour (for the work surface)
- 100 g freshly grated cheese (e.g., Gouda)
- 1 tbsp sweet paprika powder

Crush the yeast into 150 ml lukewarm water and dissolve it. Mix the flour with the salt, sift into a bowl, make a well in the center and pour in the yeast mixture along with the oil. Using the dough hooks of an electric hand mixer, knead into a dough, then knead by hand on a floured surface for about 10 minutes until elastic.

Cover and let rise in a warm place for about 1 hour. Preheat the oven to 180°C (350°F) fan‑forced. Meanwhile peel and finely dice the shallots. Heat oil in a pan and brown the onion cubes golden. Season with herbs, salt and pepper, taste, then remove from heat and cool. Roll out the dough on a floured surface to a thickness of 3 mm.

Cut squares (10×10 cm), cut each square diagonally into triangles, place 1 tsp onion mixture in the center of each triangle and roll into half‑moons. Arrange the pastries on a baking sheet lined with parchment, sprinkle with cheese and paprika, bake for 25–30 minutes until golden brown. Remove and serve arranged on a plate.
