Marmeladen-Teigtaschen

Ingredients
- 500 g flour
- 250 g butter
- 20 g yeast
- 8 tbsp lukewarm milk
- 1 egg
- 2 tbsp sugar
- plum jam or apricot jam
- 1 egg yolk

Whisk the yeast with 4 tbsp of milk until smooth. Mix in the flour and sugar. Create a well in the center of the dough, pour in the dissolved yeast, and stir to form a small pre-ferment with flour. Let rise until it doubles in size.

Warm the butter and remaining milk, then knead together with the egg. Allow the dough to rise for 2 hours.

Roll the dough relatively thin and cut into regular triangles (side length about 10-15 cm). Let rise again. Place a small amount of plum jam in the center of each piece, fold the corners toward the middle, and brush with egg yolk. Arrange on a greased baking sheet and bake at 180°C for 25 minutes until golden brown.
