Blueberry Ravioli

Ingredients

  • 350 g flour
  • 1 egg
  • Salt
  • 300 g blueberries
  • 1 tbsp sugar (to taste)
  • 1 tsp Cornstarch
  • powdered sugar
  • plain yogurt

Instructions

    Sift the flour, add the egg and 150 ml hot water with a pinch of salt, knead into a smooth dough. Add more water or flour if needed. Shape the dough into a ball, cover and rest for about 30 minutes.

    Wash the berries, drain well or pat dry. Mix with sugar and cornstarch.

    On a floured surface roll out the dough thinly, cut circles (8 cm diameter). Place 1–2 tsp of filling on half of each circle, fold into a semi‑moon shape, press edges with a fork. Boil in salted water with a pinch of sugar for 4–5 minutes. Remove with a slotted spoon and place on plates. Dust with powdered sugar and serve with a dollop of yogurt.
