Spoonsparrow onion bruschetta – always spicy and delicious!

Ingredients

  • 300 g cherry tomatoes
  • 1 small white onion
  • 4 Garlic cloves
  • 3 Tbsp finely chopped basil
  • 1 tbsp White Wine Vinegar
  • 1 tsp balsamic vinegar
  • 4 tbsp olive oil
  • Salt
  • black pepper
  • 8 small ciabatta slices

Instructions

    Wash the cherry tomatoes and cut them into small pieces. Peel and dice the onion. Peel the garlic and finely chop two cloves. Mix the tomatoes, onions, chopped garlic, and basil with the vinegars, olive oil, salt, and pepper; taste and adjust seasoning.

    Toast the ciabatta slices in a toaster until light brown and rub one side of each slice with the remaining garlic cloves while still hot. Arrange on a platter. Spoon the tomato mixture onto the toasted bread and serve immediately.
