Matcha White Chocolate Cookies Vegan

The Matcha-White-Chocolate-Cookies vegan by Spoonsparrow are quick to make and energize – perfect for a break!
Ingredients
- 2 tsp chia seeds (5 g each)
- 40 g hazelnut kernels
- 40 g vegan white chocolate
- 0.5 Vanilla pod
- 100 g vegan margarine
- 70 g whole cane sugar
- 125 g spelt flour type 1050
- 1 tsp Baking Soda
- 1 pinch salt
- 2 tbsp matcha tea powder

Dissolve chia seeds in 3 tbsp hot water and let swell for about 5 minutes. Meanwhile, chop hazelnuts and chocolate. Split the vanilla pod lengthwise and scrape out the seed with a knife.

Melt margarine in a saucepan. Stir in sugar, vanilla, and chia mixture. In a bowl combine flour, baking soda, salt, and matcha; whisk together. Add the margarine mixture and stir until smooth.

Fold in nuts and chocolate, cover dough, and chill for about 30 minutes.

Shape dough into 12 balls. Flatten slightly and place on parchment-lined tray with spacing. Bake at 180 °C (fan 160 °C; gas: level 2–3) for 10–15 minutes. Remove from tray and let cool.
