Ingredients
- 4 eggs
- 1 Red Onion
- 150 g smoked salmon (slices)
- 1 tbsp Vegetable oil
- 2 tbsp butter
- Salt
- Pepper
- 1 tbsp small capers
- 1 tbsp chopped parsley
- 1 tbsp grated Gouda
Instructions

Peel the onion and dice it into small cubes.

Heat the oil and butter in a large pan. Beat the eggs, season with salt and pepper, and fold in the parsley. Pour the egg mixture into the pan.

Add the salmon slices, diced onions, and capers on top of the eggs. Cover and cook over low heat until set.

Season with additional salt and pepper, sprinkle grated Gouda on top, and serve immediately.
