Ingredients

  • 200 g spiral pasta (pre-cooked)
  • 1 Zucchini
  • 1 red bell pepper
  • 100 g ham or salami
  • black pepper (freshly ground)
  • olive oil
  • 1 bunch fresh basil
  • 2 Garlic cloves
  • 8 eggs
  • Salt

Instructions

    Wash the zucchini, trim stems and slice. Halve the bell pepper, deseed and wash well. Slice the sausage into strips. Peel and finely chop the garlic. Heat 3 tbsp olive oil in a pan and sauté the pepper and zucchini for about 4-6 minutes. Add the pasta and sausage and stir briefly.

    Whisk the eggs, season with salt and pepper, and fold in the garlic. Pour the egg mixture over the pasta and vegetables, cover, and cook on medium heat for 4 to 5 minutes until set. Before serving, sprinkle with freshly chopped basil.
