Ingredients

  • 400 g pasta (e.g., Spirelli, Penne Rigato, short macaroni)
  • Salt
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 2 Zucchini
  • 2 Garlic cloves
  • 2 tbsp plant oil
  • 6 Eggs
  • 3 tbsp grated parmesan
  • black pepper (freshly ground)
  • nutmeg
  • 2 tbsp toasted sesame seeds

Instructions

    Preheat the oven to 180°C fan. Cook the pasta in boiling salted water for 10-15 minutes until al dente. Meanwhile, wash the peppers, halve them, remove seeds and white membranes, and dice into 1 cm cubes. Slice or shave the zucchini thinly. Peel and finely chop the garlic.

    Heat oil in a pan, sauté garlic for about 2 minutes, add vegetables and cook for 2-4 more minutes. Whisk eggs with cheese and season with salt, pepper, and nutmeg. Drain pasta, mix with vegetables, stir, then pour egg mixture over everything so the noodles are well coated.

    Transfer the pan to the preheated oven and bake for 5-10 minutes until golden yellow. Remove, cut into cubes, and serve sprinkled with toasted sesame seeds.
