Feta Omelette with Onions and Basil

Ingredients

  • 1 Red Onion
  • 2 Handfuls Basil
  • 10 eggs
  • 50 ml heavy cream
  • Salt
  • Pepper
  • cooking oil (for frying)
  • 200 g sheep cheese

Instructions

    Peel the onion and slice it into thin rings. Rinse the basil, shake dry, pluck the leaves and roughly chop.

  2. 2.

    Whisk the eggs with the cream. Season with salt and pepper.

  3. 3.

    Add a little oil to a hot non‑stick pan. Pour in 1/4 of the egg mixture and cook for 3–4 minutes over medium heat until it starts to set slowly. Sprinkle each omelette with basil, crumbled sheep cheese and onions, fold it together and place on a plate.

    Bake all four omelettes this way and serve immediately.
