Herb and Tomato Omelette

Ingredients

  • 4 large eggs
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp grated cheese
  • 2 tbsp chopped herbs of choice (basil, chervil, parsley, chives... )
  • 2 tbsp butter
  • 10 Cherry tomatoes
  • basil (for garnish)
  • parsley (for garnish)

Instructions

  1. 1.

    Separate the eggs; whisk yolks with salt, pepper, cheese and herbs.

  2. 2.

    Beat egg whites very stiff and fold into the yolk mixture.

  3. 3.

    Heat butter in a pan, pour in the egg mixture, cover with a lid, then cook over low heat until the mixture is slightly set. (On gas use a flame diffuser)

  4. 4.

    Fold the omelette onto a preheated plate and serve garnished with tomato halves, basil and parsley.
