Paprika Omelette

- 5 eggs
- 2 Bell peppers
- 2 onions
- 200 ml milk
- Salt
- Pepper (freshly ground)
- sugar
- olive oil
- 2 tbsp parmesan cheese
- sage leaf

Wash the bell peppers, halve them, remove seeds and cut into thin strips. Peel the onions and slice them lengthwise into thin slivers. Heat 3 tbsp oil in a pan and briefly sauté onions and peppers; sprinkle 1 tsp sugar over them, then reduce heat and steam covered for 15-20 minutes, stirring occasionally. Season with salt and pepper.

Beat the eggs. Whisk in milk, parmesan, salt, and pepper. In a large skillet, heat 1 tbsp oil and cook each omelette until golden yellow, about 4 minutes per side. Use a plate or large lid to flip.

Divide the omelettes onto four plates, fill with the cooked vegetables, sprinkle a few sage leaves on top, fold together, and serve hot with plenty of pepper.
