Ingredients

  • 3 eggs
  • 80 g sugar
  • 1 pinch salt
  • 60 g flour
  • 20 g starch
  • 400 g Vanilla Ice Cream
  • 4 tbsp diced candied fruit (e.g., orange peel, lemon peel, etc.)
  • 4 tbsp liquid honey
  • 6 egg whites
  • 3 tbsp powdered sugar

Instructions

    Preheat the oven to 180°C fan. Separate the eggs and beat the yolks with half of the sugar until fluffy. Beat the egg whites with a pinch of salt until stiff and gradually add the remaining sugar, continuing to beat until the mixture shines and forms peaks. Fold in the yolk mixture, then sift together the flour and starch and fold everything evenly.

    Spread the batter onto a baking sheet lined with parchment paper and bake in the preheated oven for 10-12 minutes (do the toothpick test). Remove the finished sponge from the oven, let it cool briefly, lift it off the parchment, and set it on a cooling rack to chill completely.
