Ingredients

  • 120 g digestive biscuits
  • 50 g soft butter
  • 3 eggs
  • 1 kg quark
  • 100 g liquid butter
  • 150 g powdered sugar
  • 1 pinch salt
  • 1 packet vanilla pudding powder (for 500 ml liquid)
  • 1 tsp Baking powder
  • 70 g semolina
  • 2 untreated oranges
  • 150 g candied orange zest

Instructions

    Crush the digestive biscuits finely and mix with the butter. Press the mixture evenly into a baking pan lined with parchment paper.

    Separate the eggs. Mix the quark with the butter, sugar, salt, and yolks. Fold in the pudding powder, baking powder, and semolina. Grate the zest of one orange and stir it into the batter. Squeeze the juice from all oranges. Add about 2 tbsp to the egg whites and beat until stiff. Gently fold the beaten whites into the quark mixture and pour into the pan. Smooth the top and bake in the oven for about 50 minutes. If the cake darkens, cover with foil.

    Dice the candied orange zest finely and simmer with the remaining orange juice.

    Remove the baked cake from the oven, spread the candied orange zest over it, and let cool.
