Ingredients

  • 9 sheets white gelatin
  • 1 pink grapefruit
  • 1 Organic Orange
  • 200 g Raspberries
  • 40 g sugar
  • 0.75 l fresh orange juice
  • Chocolate ribbon

Instructions

    Soak gelatin sheets in plenty of cold water. Peel the grapefruit and orange, removing all white pith. Fillet the fruits. Arrange the fruit pieces in small molds. Heat the sugar and 1 tbsp orange juice until syrupy. Add a glass of orange juice and remove from heat. Dissolve the gelatin sheets in the syrup. Pour in the remaining orange juice.

    Cool in a bowl with ice water. Once the liquid begins to set, carefully spread it over the fruit with a ladle so that they are completely coated. Chill in the refrigerator for about 3 hours until firm, then unmold. Puree raspberries. Decorate orange tartlets with chocolate ribbons and orange zest, and serve with raspberry sauce.
