Orange Granita

Ingredients

  • 50 g sugar
  • 2 untreated orange juice
  • 2 EL Campari
  • fresh lemon balm
  • 0.125 l water
  • 4 kumquats

Instructions

    Add the sugar to a small pot and bring with the water to a boil. Wash the oranges and dry them with a kitchen towel. Thinly grate the peel of one orange, avoiding the white pith. Stir the zest into the syrup and simmer for 20 minutes while bubbling. Strain the orange syrup through a sieve and let it cool in a shallow metal bowl over a water bath. Squeeze the oranges. Mix Campari and orange juice and pour into the orange syrup. Place the bowl in the freezer for 45 minutes. Stir with a fork. Return to the freezer and freeze for a total of 2½ hours, stirring frequently.
