Olives with Garlic in Oil

Olives with garlic in oil can be served as tapas with a drink or simply with some bread as an uncomplicated starter.

Ingredients

  • 3 cloves of garlic
  • 60 ml olive oil
  • 1 jar olives (drained weight 200 g)
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh oregano
  • 1 tsp fennel seeds
  • Salt
  • Pepper

Instructions

    Peel the garlic cloves and slice them thinly. Heat 1 tablespoon of oil in a small pan and sauté the garlic until fragrant. Drain the olives and place them in a bowl.

    Wash the rosemary and oregano, then shake off excess water.

    Combine the remaining olive oil with rosemary, oregano, fennel seeds, and garlic; pour over the olives. Season with salt and pepper, mix well, and let the garlic‑olive mixture marinate for several hours.
