Fried Tomato Slices

Ingredients
- 1 beef heart tomato (or a regular meat tomato)
- 0.5 untreated lemon
- 1 handful chives
- 120 g cream cheese
- Salt
- Pepper
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- basil (leaves and flowers for garnish)

Wash the tomato, cut off the stem end and slice it into four about 1 cm thick slices. Wash the lemon hot, dry it, grate the zest and squeeze out the juice. Rinse the chives and cut them into fine ribbons. Mix the cream cheese with the lemon juice and chives. Season with salt and pepper.

Sauté the tomato slices in 2 tbsp oil for about 1 minute on each side. Remove from the pan and let cool briefly. Place on four small plates and season lightly with salt and pepper. Using two small spoons, scoop out dollops of the cream cheese mixture and place two on each tomato slice. Sprinkle some lemon zest over them and drizzle the remaining oil and balsamic vinegar on top. Serve the fried tomato slices garnished with basil leaves and flowers.
