Olive Bruschetta

Ingredients

  • 12 slices ciabatta (or baguette)
  • 2 cloves garlic (halved)
  • 125 g black olives (pitted)
  • 1 tbsp small capers
  • 1 tbsp pine nuts (roasted in a pan without oil)
  • 2 tbsp Tomato paste
  • 4 tbsp olive oil
  • 2 tsp balsamic vinegar
  • pepper (from grinder)

Instructions

    Blend olives with capers, pine nuts, tomato paste, vinegar, 2 tbsp olive oil and some pepper to taste.

    Roast bread slices in a hot oven until golden yellow, rub with garlic and spread the olive cream on top, serve immediately.
