Ingredients

  • 1 radish
  • Salt
  • 2 medium carrots
  • 16 very large black olives (pitted)
  • 16 small olives (pitted)
  • 100 g cream cheese
  • 1 tsp lemon juice
  • 1 sprig parsley
  • 16 red peppercorns

Instructions

    Peel the radish, cut into 16 about 1 cm thick slices and lightly salt. Set aside to drain water. Peel the carrots and slice them.

    Drain both olive varieties and let them dry. From each large olive cut a small wedge lengthwise. Mix cream cheese with lemon juice and a pinch of salt. Spread this mixture in the opening of the olives, creating a thin white stripe.

    Pat the radish slices dry and place four on a plate to form the "ice sheets." Cut a small triangle from the carrots for the "beak" of the penguins and set aside. Place carrot slices as "feet" in the center of the radish. Insert the carrot beaks into each small olive. Skewer the penguin heads across the large olives with a small wooden skewer and secure them on the vegetable towers. Finally, press a peppercorn and a small piece of parsley into the cream cheese for the bow ties and the penguins are ready.
