Ingredients

  • 500 g flour
  • 1 tsp salt
  • 0.5 cube fresh yeast (21 g)
  • 150 g black, pitted olives
  • 2 tbsp olive oil
  • flour (for the work surface)
  • butter (for the molds)
  • 4 tbsp dried herbs of Provence

Instructions

    Mix the flour with the salt in a bowl, create a well in the center, crumble the yeast into it and stir with 50 ml lukewarm water. Dust the edges with a little flour and cover to rise in a warm place for 15 minutes.

    Drain the olives and chop them.

    Add another 180 ml lukewarm water and the oil to the pre‑mix and knead everything by hand or with the dough hooks of an electric mixer into a smooth dough that lifts from the bowl. Fold in the olives and knead on a floured surface for about 10 minutes, adding more flour or water if needed.

    Let the dough rise covered again for another 45 minutes in a warm place.

    Preheat the oven to 200 °C (Oven + fan).

    Knead the dough once more, divide into 10–12 equal portions, shape each into a small ball and place them in buttered terracotta flower pots. Let rise for an additional 15 minutes.

    Brush the tops with water, sprinkle with herbs and bake in the preheated oven for about 25 minutes.

    Remove, let cool slightly and serve.
