Sunflower Seed Baguette

Ingredients
- 0.5 cube fresh yeast (21 g)
- 1 pinch sugar
- 500 g wheat flour
- 1 tsp salt
- 2 tbsp sunflower oil
- flour for dusting
- 80 g sunflower seeds
- Sea salt

For the pre-ferment, stir the yeast with 2 tbsp lukewarm water and the sugar, then add enough flour until a soft dough forms. Cover and let rise in a warm place for about 20 minutes (the pre-ferment should show cracks on the surface).

Knead the remaining flour with approximately 220 ml lukewarm water, salt, oil, and the pre-ferment. Cover and allow to rise for another 40 minutes.

Preheat the oven to 200°C fan.

Afterward knead the dough again, divide it into four parts, and shape each into a baguette stick. Make several shallow diagonal slashes and place on a baking sheet lined with parchment paper. Cover and let rest for about 20 more minutes.

Brush with water and sprinkle sunflower seeds. Season with sea salt and bake in the oven for about 45 minutes until golden brown and crisp.

Remove the finished loaves from the oven, allow to cool, and serve.
