Olive Bread

- 1 loaf baking mix (for white bread)
- oil
- water
- Salt
- 300 g olives (black, pitted, drained)
- 6 sprigs rosemary
- 300 g goat cheese
Instructions

Wash the rosemary sprigs, shake dry, remove two needles from each and chop the needles. Halve the olives. Prepare the baking mix according to package instructions. Knead the chopped rosemary and olives into the dough until about 8 pieces are incorporated. Let the dough rise as directed on the package, then divide it in half and place in two loaf pans lined with parchment paper; let rise again. Press the remaining olives lightly into one side of the dough.

Meanwhile slice the goat cheese.

Bake the loaves in a preheated oven (temperature and time per baking mix instructions). After halfway through, top with goat cheese slices and rosemary sprigs, then finish baking.

Let rest about 10 minutes, lift from pans, remove parchment paper, and cool on a wire rack.

Serve with salad or sausage.
