Ingredients

  • 100 g nuts (macadamia, peanuts and almond kernels)
  • 250 g fine rolled oats
  • 100 g coarsely ground oats
  • 100 g Spelt flakes
  • 200 g brown cane sugar
  • 50 g beetroot syrup
  • 1 untreated lemon (juice and zest)
  • 1 tbsp freshly grated ginger
  • 325 g butter
  • 100 g raisins

Instructions

    Preheat the oven to 160°C fan.

    Chop the nuts. Mix them with the rolled oats, spelt flakes and cane sugar in a bowl. In a saucepan slowly heat the beetroot syrup, 2 tbsp lemon juice and zest, ginger and butter, stirring well, then fold in the raisins.

    Spread the mixture evenly on a baking tray lined with parchment paper to about 1.5 cm thickness.

    Bake in the oven for 25-30 minutes until golden brown. Remove from the oven, cut into small pieces and let cool on a wire rack.
