Olive and Feta Pizza

Ingredients

  • 250 g flour (Vienna Griessler)
  • 20 g yeast
  • 1 tsp salt
  • 1 tsp sugar
  • Olive oil (extra virgin)
  • 200 g feta
  • 6 ripe tomatoes
  • 200 g black olives
  • Salt
  • freshly ground pepper
  • 1 tbsp fresh oregano

Instructions

    Mix the flour with the salt, form a mound and create a well. Sprinkle the yeast and sugar into the well. Add about 80 ml lukewarm water and let sit for 20 minutes. Then knead with 2 tbsp oil and about 50 ml lukewarm water into a smooth dough; add more warm water if needed. Cover the dough and let it rise in a warm, draft-free place for 1 hour.

    Preheat the oven to 250°C fan.

    Knead the dough well and roll it out on a floured work surface so that it fits an oiled baking tray. Wash, blanch, peel, and cut the tomatoes into pieces. Arrange the tomato pieces tightly on the dough. Crumble the feta over the tomatoes, then scatter the olives on top. Sprinkle with oregano leaves and drizzle with 2 tbsp oil. Season with pepper. Be careful with salt, as feta is already quite salty.

    Place in the hot oven and bake for 25 minutes until golden brown.
