Spinach and Cheese Pizza

Ingredients
- 450 g flour
- 1 tsp salt
- 0.5 cube fresh yeast
- 0.25 l lukewarm water
- 3 tbsp olive oil
- 1 kg spinach
- 2 Garlic cloves
- 1 cup sour cream
- 80 g sunflower seeds
- Salt
- ground pepper from the mill
- freshly grated nutmeg
- 300 g grated Bergkäse
- 100 g grated mozzarella
- flour (for dusting)

Mix flour and salt in a bowl. Dissolve yeast in water, add oil and combine with flour to knead into a smooth dough. Cover and let rise at room temperature until about double size.

Trim spinach of thick stems, rinse and pat dry. In a pot over medium heat, wilt slightly. Drain, cool, squeeze out excess moisture, season with salt, pepper and nutmeg. Peel garlic, press and mix with sour cream. Preheat oven to 220°C (428°F) fan or conventional heat.

Divide dough into four portions, shape into balls, roll each on a floured surface into round bases. Place on parchment-lined baking trays. Spread sour cream over each base leaving a thin border. Top with spinach, sprinkle mixed cheeses, then sunflower seeds, lightly pepper and salt. Bake in lower rack for about 20 minutes until golden brown. Serve hot.
