Blue Cheese, Pear and Walnut Pizza

Ingredients

  • 600 g flour (Vienna Griessler)
  • 42 g yeast (1 cube)
  • 250 ml Water
  • 1 tsp sugar
  • 3 tsp salt
  • 3 ripe pears
  • 250 g Gorgonzola
  • 60 g walnut kernels
  • 1 sprig rosemary (small)

Instructions

    Place the flour in a bowl and create a well with your hand. Crumble the yeast into the well and sprinkle with sugar. Pour about 100 ml of preheated water into the well. Cover the bowl with a kitchen towel and let rest for about 20 minutes.

    Remove the towel, sprinkle salt over the flour, gradually add the remaining warm water and knead everything into a smooth dough. If the dough is too soft, add more flour; if it lacks elasticity, gently fold in some warm water. Cover the finished dough and leave to rise in a warm, draft‑free place for about 60 minutes.

    Meanwhile peel and grate the pears. Dice the Gorgonzola into tiny cubes. Chop the walnut kernels finely. Remove the needles from the rosemary sprig.

    Preheat the oven to 200 °C fan‑forced. Knead the dough again, dust your work surface with plenty of flour, and roll the dough out on a baking sheet using a rolling pin. Leave a small edge. Sprinkle with pear shreds, Gorgonzola cubes, walnut kernels and rosemary needles. Bake in the hot oven for about 30 minutes until golden brown. Serve hot with Tuscan red wine.
