Oil sardines in onion and balsamic vinegar marination

Ingredients

  • 16 fresh sardines (ready to cook)
  • olive oil (cold-pressed)
  • 3 bay leaves
  • 2 white onions
  • 1 Organic lemon
  • 1 tsp coriander seeds
  • 2 tsp black peppercorns
  • 125 ml wine vinegar
  • balsamic vinegar
  • 1 tsp salt

Instructions

    Peel the onions and cut them into rings. Wash the lemon and slice it. Bring 500 ml water with wine vinegar, onions, lemon slices, bay leaves, coriander, salt and pepper to a boil. Reduce heat and simmer gently for 10 minutes. Then add the sardines to the broth and let them cook at low heat for 10 minutes.

    Lift the sardines from the broth and arrange them on a plate. Remove the ingredients used for the broth from the liquid and sprinkle over the sardines. Whisk together 6 tbsp olive oil with 2 tbsp balsamic vinegar and 4 tbsp of the broth. Distribute over the sardines and let rest at room temperature for about 1 hour. Serve as an appetizer with white bread.
