Octopus with Bell Peppers

Ingredients
- 600 g pre-cooked octopus
- Salt
- Lemon juice
- ground pepper
- red and yellow bell pepper halves (2 each)
- 75 g tomato purée (or pizza tomatoes)
- 2 shallots
- 2 Garlic cloves
- 4 tsp pesto verde (ready-made)
- 4 tbsp olive oil

Wash the bell pepper halves, halve them, remove seeds, and slice into strips. Peel and finely chop the shallots and garlic. Sauté the shallots and garlic in 2 tbsp olive oil, add the pepper strips, season with salt and pepper, drizzle with 1 tbsp lemon juice, add the tomato purée, mix well, taste.

Remove from heat. Quickly sear the octopus in the remaining olive oil on all sides, season with salt and pepper, drizzle with lemon juice. Arrange over the bell pepper mixture and garnish with pesto.
