Orange Halibut with Arugula

Ingredients
- 3 oranges
- 4 halibut steaks (about 180 g each)
- Salt
- pepper (from grinder)
- olive oil
- 1 tbsp cold butter
- a handful basil
- a handful arugula
- 3 tbsp balsamic vinegar

Squeeze juice from two oranges. Thoroughly peel the third orange, halve it and slice into thin rounds. Rinse the fish and pat dry. Season with salt and pepper and brown on both sides for 2-3 minutes in 1 tbsp hot oil in a pan. Remove and let rest wrapped in foil. Deglaze the pan with the orange juice. Do not boil further and stir in the butter. Adjust seasoning with salt and pepper. Tear basil leaves, set aside some for garnish and roughly chop the rest. Add to sauce and allow orange slices to infuse.

Rinse arugula, clean and dry by spinning. Arrange on a plate, drizzle with oil and balsamic vinegar. Place the fish on top and pour the sauce over it.

Serve garnished with remaining basil leaves.
