Octopus Salad

Ingredients

  • 600 g octopus
  • 0.125 l vinegar
  • 4 cloves garlic
  • 50 g parsley (1 bunch)
  • 4 sprigs Mint
  • 2 tbsp lemon juice
  • 6 tbsp Olive oil
  • Salt
  • freshly ground pepper

Instructions

    Wash the octopus and bring to a boil in 2 l water, vinegar, and 1 tbsp salt. Simmer covered on low heat for about 1 hour. Test doneness with a fork, then shock in cold water and drain.

    Peel the garlic and slice thinly. Remove stems from herbs and finely chop. Mix garlic, lemon juice, salt, pepper, and oil together.

    Cut the octopus arms into small pieces and add to the dressing. Let marinate for at least 2 hours, taste again, then serve.
