Ingredients
- 1350 g mango (3 mangos)
- 1.2 kg pineapple (1 pineapple)
- 700 g papaya (2 papayas)
- 2 red chili peppers
- 100 ml freshly squeezed orange juice
- 100 ml unsweetened coconut milk
- 0.5 tbsp cornstarch
- 3 tbsp white wine vinegar
- 4 tbsp oil
- Salt
- Pepper (freshly ground)
- 1 tsp sugar
- 1 bunch coriander leaves

Peel the mangos, remove the flesh from the pit, then cut into strips. Peel and quarter the pineapple, removing the core. Peel, halve, and seed the papayas. Cut pineapple and papaya into strips. Seed the chili peppers and finely dice them.

Bring orange juice with coconut milk to a boil. Whisk cornstarch with a little cold water, pour into the citrus mixture, stir, and simmer until slightly thickened; then let cool. Stir in vinegar and oil, seasoning with salt, pepper, sugar, and chili.

Pour the dressing over the fruit and gently toss. Before serving, sprinkle with coarsely chopped coriander leaves.
