Ingredients

  • 150 g oats
  • 500 ml vegetable broth
  • 2 carrots
  • 5 g ginger root
  • 1 handful mint
  • 0.5 lemon (juice)
  • Pepper

Instructions

    Bring the oats to a boil in a pot with the broth. Simmer for 1 minute over medium heat. Then remove from the stove and let it sit for 10 minutes to thicken.

    Meanwhile, peel, wash and grate the carrots. Peel and finely chop the ginger. Wash, dry, shake out and chop the mint.

    Mix the grated carrots with ginger, mint and lemon juice, seasoning with pepper. Serve the oat porridge topped with the carrot mixture in bowls.
