Ingredients
- 75 g dried cranberries (sweetened with fruit juice)
- 50 g dried cherries (or goji berries)
- 2 Eggs
- 100 g powdered sugar from raw cane sugar
- 1 pinch salt
- 300 g spelt whole‑grain flour
- 2 tbsp spelt whole‑grain flour (for handling)
- 100 g fine rolled oats
- 0.5 tsp cinnamon
- 1 tsp vanilla powder
Instructions
-
1.
Coarsely chop cranberries and cherries. Whisk eggs with powdered sugar and a pinch of salt until frothy. Add flour, oats, spices, cranberries, and cherries; knead into a smooth, pliable dough, adding cold water or more flour as needed.
-
2.
Shape the dough into a ball and chill for about 30 minutes. Line two baking sheets with parchment paper.
-
3.
Roll out the dough on lightly floured surface to about ½ cm thickness and cut zig‑zag circles (≈5 cm diameter). Place on baking sheets and bake in preheated oven at 180 °C (fan 160 °C; gas 2–3) for 10–15 minutes until golden brown. Remove from sheet and cool.
